One of my favourite things to do on the weekend is spend some time out in my garden. Mid-morning I often treat myself to a cold glass of lavender lemonade which, without fail, sweetens up the day.

Sipping this refreshing tonic under the warmth of the sun – life truly doesn’t get much better.

You will need:
1 tray crushed ice cubes
1/4 cup dried lavender
2 cups boiling water
1/2 cup organic sugar/stevia/monk fruit
8 organic lemons
5 cups filtered cold water

 

Directions

Put the tray of ice cubes into a jug. Place the lavender into a bowl, and pour boiling water over it. Allow to steep for about 10 minutes, then strain out the lavender and discard in the compost bin.

Mix the organic sugar into the hot lavender water, then pour into the jug with the ice.

Squeeze the juice from the lemons into the jug, getting as much juice as you can. I use a hand-squeeze glass juicer.

Top off the jug with cold water, and stir. Taste, and adjust lemon juice or sugar if desired. Pour into tall glasses, sit on your wooden garden bench and admire your garden, and relax!
